For the Blackened Salmon:

  • 4 salmon fillets, skin on or off as per your preference
  • 2 tablespoons paprika
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cayenne pepper (adjust according to heat preference)
  • 1 teaspoon Real Salt
  • 1/2 teaspoon black pepper

For the Citrus Cream Sauce:

  • 2 tablespoons unsalted butter
  • Juice of 1/2 lemon
  • Juice of 1/2 small orange
  • Juice of 1/2 grapefruit
  • 1 cup heavy cream
  • 1/4 cup white wine
  • Salt and black pepper, to taste

Step 01: 
Ensure the salmon fillets are dry. Using a paper towel, pat the fillets to remove any excess moisture.
While any type of Salmon will work for this recipe, we recommend using King Salmon or Coho Salmon fillets.

Mix Seasonings: In a small bowl, mix together the paprika, onion powder, garlic powder, dried thyme, dried oregano, cayenne pepper, salt, and black pepper.

Rub the spice mixture liberally onto the salmon fillets, ensuring all sides are coated.

Cook the Salmon: In a large skillet, heat over medium-high heat. Once hot, add the salmon fillets, seasoning-side down, and cook for 3-4 minutes or until the nice blackened crust.

Flip and cook for an additional 3-4 minutes, or until the salmon is cooked through. Remove the salmon from the skillet and set aside while you prep the cream sauce.

In a new skillet, warm to medium and melt the 2 tablespoons of butter. Add the lemon and orange zest and juice to the pan, stirring to combine. Allow the mixture to simmer for 1-2 minutes, reducing slightly to concentrate the flavors.
